One-pot Quinoa with Beetroot and Baby Spinach

Ingredients
  • 2 teaspoons olive oil
  • ½ brown onion, diced
  • 1 clove garlic, crushed
  • 1 jar Beerenberg Slow Cooker Farmhouse Chicken
  • 3 medium beetroots, peeled and thinly sliced
  • ¾ cup quinoa
  • 1½ cups vegetable stock or water
  • large handful baby spinach
  • 100g feta, crumbled
  • ¼ cup walnuts
  • mint leaves, to garnish
Method:

Place a large saucepan on medium heat. Add the olive oil, onion and garlic and cook for 3 minutes. Add the jar of Beerenberg Slow Cooker Farmhouse Chicken sauce, beetroot, quinoa and vegetable stock. Stir to combine before covering and turning the heat to low. Cook for 15 minutes or until quinoa is cooked through. Add the baby spinach and stir through to wilt.

Divide between 4 serving bowls and top with feta, walnuts and mint to serve.
