Cuban Warm Rice and Black Bean Salad

  • 200g Basmati rice
  • 1 jar Beerenberg Slow Cooker Cuban Mojo Pork
  • 1 x 400g can black beans
  • ½ red onion, thinly sliced
  • large handful rocket
  • 1 punnet cherry tomatoes, halved
  • 1 avocado, sliced
  • juice of 1 lime

Method:

In a saucepan, mix the rice, jar of Beerenberg Slow Cooker Cuban Mojo Pork and 650ml of water. Place over a very low heat and cover. Cook for 20-30 minutes or until rice is soft, stirring every 5 minutes to ensure the rice does not stick.

Place the rice in a large serving bowl and add the beans, red onion and rocket. Toss to combine. Top with the cherry tomatoes and avocado and dress with lime juice to finish.
