Fresh Watermelon Salad with Feta, Mint and Honey Mustard Dressing

Ingredients
  • 500g watermelon
  • ½ bunch mint, leaves picked
  • ¼ red onion, finely sliced
  • large handful baby salad leaves
  • 3 tablespoons Beerenberg Honey Mustard Dressing
  • 120g Danish feta
Method:

Remove the skin from the watermelon and cut into small wedges. In a large bowl, toss the watermelon, mint, red onion, salad leaves and Beerenberg Honey Mustard Dressing. Place in a serving bowl and crumble the feta on top.
