  • 1 dozen fresh Coffin Bay Oysters
  • 120g bacon, cut into thin strips
  • Gaucho’s Diablo Sauce
  • Rock Salt

Tony & Joe of Gaucho’s Argentinian Restaurant have been making their own Diablo Sauce since 1985.  Now, we can share with you their famous sauce that you can use in your own home.

Preheat oven to 200oC.  Arrange oysters on a roasting tray or pan on a bed of rock salt, ensuring they are all sitting level and upright.  Divide the bacon evenly amongst the oysters.  Top each bacon covered oyster with 2-3 tablespoons of Gaucho’s Diablo Sauce or until the shell if filled.  Bake oysters in preheated oven for 15-18 minutes until sauce is bubbling.  Oysters may also be cooked under a hot grill.

Gauchos’ Diablo Sauce can also be used for a dipping sauce for natural oysters.
