Chargrilled Zucchini, Capsicum and Herby Goat Cheese Toastie

Ingredients

 


  • 1 red capsicum, cut into 4 slices
  • 1 zucchini, sliced
  • 100g goat cheese
  • 4 sprigs thyme, leaves picked
  • 1 tablespoon parsley, chopped
  • zest of 1 lemon
  • salt & pepper
  • 4 slices good quality bread
  • 3 tablespoons Beerenberg Toastie Relish

Method:

Heat a griddle pan on high heat.  Add the capsicum and zucchini and cook until charred on both sides.  In a small bowl, mix the goat cheese, thyme, parsley, lemon zest and a pinch of salt and pepper.

To assemble the sandwich, lay out two slices of bread.  Add the Beerenberg Toastie Relish, chargrilled vegetables and herby goat cheese.  Top with the remaining bread.  Cook in sandwich press until golden brown. Yum!
