Asian Chicken Salad with Crunchy Noodles and Mango, Lime & Chilli Dressing

Ingredients

 


  • 1 tablespoon oil
  • 2 chicken breasts, sliced
  • salt & pepper
  • ¼ Chinese cabbage, sliced
  • 1 cucumber, sliced
  • large handful snow peas, tops removed
  • 4 spring onions, chopped
  • 125g crunchy noodles
  • 4 tablespoons Beerenberg Mango, Lime & Chilli Dressing

Method:

Heat a large frypan over high heat and add the oil. Place the chicken breast in the pan with a large pinch of salt and pepper. Cook for 3 minutes before turning and cooking for another 2 minutes, or until cooked through. Remove the chicken from the heat.

In a large bowl, mix together the cabbage, cucumber, snow peas, spring onion, crunchy noodles and Beerenberg Mango, Lime & Chilli Dressing. Place in a large serving bowl and top with the chicken to serve.
