Tomato and Roasted Garlic Pasta Salad

This Tomato and Roasted Garlic Relish is a real classic just like Lois

Ingredients

 


  • 1 jar Beerenberg Tomato and Roasted Garlic Relish
  • 500g casarecce pasta
  • ½ bunch basil, leaves picked
  • 2 handfuls rocket
  • 1 punnet cherry tomatoes, halved
  • 80g parmesan, shaved

Method:

In a large saucepan of boiling water, cook the pasta according to the packet instructions. As the pasta is cooking, add the Beerenberg Tomato and Roasted Garlic Relish to a large bowl. Once the pasta is cooked, strain, and immediately add to the Beerenberg Tomato and Roasted Garlic Relish. Stir together and place in the fridge to cool.

Remove the pasta from the fridge, add the basil, rocket and cherry tomatoes and toss to combine. Top with parmesan to serve.
