Ingredients

 


  • 1 cup of strawberries, diced
  • 1 red onion, diced
  • 3 cups chopped parsley
  • 1 cup of cooked quinoa
  • ¼ cup of fresh mint leaves
  • 2 tablespoons of olive oil
  • 1 tablespoon of apple cider vinegar
  • salt and pepper to taste

Method:

In a large bowl place olive oil and apple cider vinegar and combine. Add in parsley, quinoa, diced strawberries and diced red onion. Toss salad and season to taste.
