Apple & Rice Pudding

Ingredients (Serves 2):

  • 2 cups cooked brown rice

  • 410g can pie apple

  • 1/4 cup sultanas

  • 1 1/2 tbs Beerenberg Australian Honey

  • 1 tbs lemon juice

  • 1/4 tbs lemon rind

  • 4 tbs low fat cottage cheese


Method:

  1. In a bowl, combine the rice, apple, lemon juice, rind, sultanas, honey and cottage cheese.

  2. Spoon into two serving dishes and chill well before serving.
