BBQ Chicken Pasta
Ingredients (Serves 2):
2 portions of any pasta type
2 chicken breasts, 1cm cubed
4 rashers bacon, diced
2 tbs Beerenberg BBQ Sauce
1 tsp Beerenberg Crushed Garlic
3/4 cup thickened cream
1/2 cup sundried tomatoes
1 tsp mixed herbs
Method:
Begin by bringing a litre of water to the boil.
Add pasta to the boiling water and turn heat to low.
Dice bacon and place in pan with a small amount of oil and garlic on high heat.
Once bacon is browning, add cubed chicken and turn heat to medium.
After the chicken starts to brown add sundried tomatoes, mixed herbs and BBQ sauce.
Mix ingredients and place lid on pan. Turn heat down to low, and leave for 5 to 10 minutes, checking regularly.
Once chicken is browned stir ingredients to separate.
Stir ingredients while pouring in cream. Once fully stirred (the cream should now be a brown colour from mixing with the BBQ sauce), then add lid again and turn heat to full.
Once sauce is bubbling take off heat, place pasta on dish or bowl, and layer sauce on top of pasta.
Garnish with parsley.
