Chilli & Soy Warm Chicken Salad
Ingredients (Serves 6):
- 4 chicken breast fillets
- Beerenberg Extra Virgin Olive Oil
- Beerenberg Ranch Dressing
- Marinade
- 3 tbs Beerenberg Sweet Chilli Relish
- 2 tsp Beerenberg Crushed Garlic
- 1/2 cup soy sauce
- 1 tbs worcestershire sauce
- 1 1/2 tbs brown sugar
- 2 tbs Beerenberg Australian Honey
- Salad
- 1 continental lettuce
- Tomatoes
- Cheddar cheese
- Onion
- Cucumber
- Red capsicum
Method:
- Combine all marinade ingredients in a large non-metallic bowl.
- Place breast fillets into mixture and allow to marinade for at least 2 hours.
- In a heavy-based frying pan, heat oil. Cook breast fillets on high heat.
- Once fillets have sealed, pour half the marinade mixture into pan and leave to simmer for 5 to 10 minutes.
- Prepare salad. You can use any fresh ingredients you like but it is essential that it contains lots of good quality cheddar cheese. Divide between 6 plates.
- Add remaining marinade mixture to pan and cook for a further 5 minutes or until chicken is cooked through.
- Remove chicken from pan and slice into bite sized pieces.
- Place on the salad and drizzle with Beerenberg Ranch Dressing.
