Chilli Chicken & Coconut Soup

Ingredients (Serves 4):

  • 1 stalk lemongrass, white part sliced

  • 6 coriander roots, finely chopped

  • 1 tsp finely grated ginger

  • 1 1/2 cups chicken stock

  • 3 1/2 cups coconut milk

  • 2 chicken breast fillets, thinly sliced

  • 1 tbs lime juice

  • 1 tbs fish sauce

  • 1 tsp brown sugar

  • 2 tbs coriander leaves

  • 1/2 cup Beerenberg Chilli Sauce

 

Method:

  1. Place lemongrass, coriander root, ginger, stock and coconut milk in a saucepan over medium heat. 

  2. Simmer for 4 minutes. 

  3. Add the chicken, chilli sauce, lime juice, fish sauce and sugar. 

  4. Cook for 5 minutes until chicken is cooked through. 

  5. Stir through coriander leaves.
