Chocolate Glazed Strawberry Ice Cream Cake
Ingredients (Serves 6):
60g semi-sweet chocolate
1/2 cup heavy cream, whipped
1 punnet Beerenberg strawberries
2 tbs slivered almonds, toasted
15g unsweetened chocolate
Instant coffee or cream sherry
Vanilla ice cream
Method:
Combine chocolates, melt over hot water and set aside.
Flavour whipped cream with instant coffee to taste.
Wash and hull berries.
Cut ice cram in 2 rectangles. Rewrap one and put back in freezer for later use. Place other on chilled serving platter. Pour all chocolate on top and spread quickly to cover top and sides.
Cover top with whipped cream, sprinkle with almonds and put back in freezer until serving time.
Just before serving, cover top with berries and put remainder around cake. Cut in squares.
