Coconut Chicken with Coriander

Ingredients (Serves 4):

  • 1 onion, roughly chopped

  • 2 tsp Beerenberg Crushed Garlic

  • 1 red capsicum, sliced into strips

  • 500g chicken breast fillet, sliced into strips

  • 1/3 cup peanut butter

  • 200ml coconut milk

  • 1/2 - 1 cup water

  • 1tbs Beerenberg Sweet Chilli Relish

  • 1 bunch baby bok choy, trimmed

  • 1 tbs chopped coriander


Method:

  1. Heat a wok or frying pan, add a little oil and fry onion, garlic and capsicum for 3 minutes or until onion is soft.

  2. Add chicken in small amounts and stir-fry until lightly brown.

  3. Stir in peanut butter, coconut milk, water, sweet chilli relish and bok choy. Cook a further 3 minutes or until sauce boils and thickens slightly. Stir through the coriander and serve with rice or noodles.
