Confetti Spaghetti

Ingredients:

  • 500g spaghetti

  • 1 tbs Beerenberg Extra Virgin Olive Oil

  • 1 onion, chopped

  • 1 red capsicum, cut into small strips

  • 1 yellow capsicum, cut into small strips

  • 1 head broccoli, cut into small florets

  • 2 tbs brandy

  • 2 tbs Beerenberg Sweet Chilli Relish

  • 3 tbs Beerenberg Australian Honey


Method:

  1. Cook pasta in a large pan of boiling water until tender.

  2. Meanwhile, heat olive oil in a large pan or wok.

  3. Place onion, capsicum and broccoli in heated pan and lightly cook.

  4. Add brandy, chilli relish and honey and simmer for 5 minutes.

  5. Drain the spaghetti. Mix the vegetables and sauce through the spaghetti.

  6. Top with a sprinkle of ground pepper and Parmesan cheese.

  7. Serve with a garden salad.
