Confetti Spaghetti
Ingredients:
500g spaghetti
1 tbs Beerenberg Extra Virgin Olive Oil
1 onion, chopped
1 red capsicum, cut into small strips
1 yellow capsicum, cut into small strips
1 head broccoli, cut into small florets
2 tbs brandy
2 tbs Beerenberg Sweet Chilli Relish
3 tbs Beerenberg Australian Honey
Method:
Cook pasta in a large pan of boiling water until tender.
Meanwhile, heat olive oil in a large pan or wok.
Place onion, capsicum and broccoli in heated pan and lightly cook.
Add brandy, chilli relish and honey and simmer for 5 minutes.
Drain the spaghetti. Mix the vegetables and sauce through the spaghetti.
Top with a sprinkle of ground pepper and Parmesan cheese.
Serve with a garden salad.
