Cous-cous with Honey Yoghurt
Ingredients (Serves 4):
400g Fresh Fruit Salad
2 cups instant couscous
2 cups pineapple juice
2 tbs Beerenberg Australian Honey
2 tbs butter, melted
2 tsp cinnamon
1/2 cup pecan nuts, chopped
1/2 cup sunflower seeds
1 cup natural yoghurt
2-3 tbs Beerenberg Australian Honey, extra
Method:
Place the couscous into a bowl.
Bring the pineapple juice to the boil and pour 1 1/2 cups over the couscous.
Fluff with a fork, and if it is too dry, add the remaining pineapple juice.
Stir in the honey, butter and cinnamon and then add the fruit salad, pecan nuts and sunflower seeds.
Serve with natural yoghurt and sweeten with honey to taste.
