Five Spice Pork Skewers
Ingredients (Serves 4):
600g pork fillet, halved lengthwise, cut into cubes
1/2 cup Beerenberg Plum Sauce
1/4 cup apple juice
1 tbs soy sauce
3 tbs Beerenberg Pure Honey
1/2 tsp Chinese five spice powder, to taste
1 tbs toasted sesame seeds
1 tbs butter or margarine
1 large granny smith apple, cut into thin wedges
120g baby spinach
Method:
Thread the pork onto soaked skewers; place in a shallow glass dish. Combine plum sauce, juice, soy, 2 tablespoons of honey and five-spice powder to taste; brush half the mixture over skewers. Marinate 30 minutes; drain.
Cook skewers for 3-4 minutes each side until cooked to your liking, brushing with remaining marinade near end of cooking time to glaze. Sprinkle with sesame seeds.
Meanwhile, melt butter with remaining honey in a large frying pan over moderate heat. Cook apple for 2 minutes, turning once, until tender and glazed. Plunge the spinach into a saucepan of simmering water until just wilted. Drain well. Serve apples and spinach with skewers.
