Grilled Salmon with Strawberry Salsa

Ingredients:

  • 6 Salmon or Ocean Trout steaks

Salsa

  • 1 Lebanese Cucumber, finely diced

  • 1 Spanish Red Onion, finely diced

  • 1 tbs Coriander, finely chopped

  • 3 tbs Rice Wine Vinegar

  • yellow Pepper, finely diced

  • red Pepper, finely diced

  • 250g Strawberries, hulled and diced small

 

Method:

  1. Mix all salsa ingredients, except strawberries, cover and chill for one hour. 

  2. Add strawberries just before serving

 

Sauce:

  • 1 tbs Butter

  • 1 tsp Beerenberg Crushed Garlic

  • 1 tbs Beerenberg Australian Honey

  • 1 tbs sweet Soy Sauce

  • 2 tsp Dijon Mustard

  • 2 tbsp fresh Lemon Juice

 

Method:

  1. Combine all ingredients in small saucepan, simmer 2 minutes and set aside. 

  2. Heat a grill or heavy-based frypan. 

  3. When hot, brush the sauce over salmon. 

  4. Grill steaks about 3-4 minutes on each side. 

  5. Brush with sauce again after turning, and again when done. 

  6. Serve on a bed of mashed potatoes. 

  7. Top with a generous amount of Salsa.
