Marinated Kangaroo Fillet
Ingredients (Serves 2):
1kg Kangaroo Saddle Fillet
100ml Oil
200ml Beerenberg Premium Satay Marinade
Method:
Prepare kangaroo and place into a bowl with the Satay marinade and oil.
Allow to marinade for 24 hours.
Place kangaroo onto a hot chargrill and cook to medium rare.
Place the excess marinade into a pan with a touch of water, reduce until it becomes a sauce consistency.
Slice the kangaroo and position onto plate and pour the sauce over.
