Marmalade & Sweet Chilli Chicken
Ingredients (Serves 4):
1 tbs Beerenberg Extra Virgin Olive Oil
500-600g skinless chicken thigh fillets
1 tsp chicken stock powder
1/4 cup Beerenberg Orange Marmalade
2 tbs Beerenberg Sweet Chilli Relish
Steamed sugarsnap peas or baby green beans, to serve
1 1/4 cups rice, cooked, to serve
Method:
Heat the oil in a large frying pan over moderate heat. Cook chicken in batches, 3-4 minutes each side until golden. Return all chicken to pan.
Season with salt and black pepper. Sprinkle with stock powder. Add 1 cup water, the marmalade and chilli relish and mix to combine. Simmer 5 minutes. Remove chicken to a plate. Keep warm.
Simmer liquid 5 minutes until thickened to a syrupy sauce. Serve chicken and peas over rice with the sauce and a green salad.
