Orange Marmalade Cookie Bars

Ingredients:

  • 1/2 cup butter

  • 1/2 cup white sugar

  • 1/2 tsp almond extract

  • 1/2 tsp vanilla extract

  • 1 egg

  • 1 1/2 cups plain flour

  • 1 tsp baking powder

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground cloves

  • 1/2 tsp salt

  • Beerenberg 350g Orange Marmalade


Method:

  1. Preheat oven to 200C. Grease an 8-inch square pan.

  2. In a large mixing bowl, cream the butter with sugar, vanilla and almond essence. Stir in the egg and mix until well blended.

  3. In a separate bowl, mix together the flour, baking powder, cinnamon, cloves and salt. Add to the first mixture and mix well.

  4. Spread half of the dough into the pan. Cover with a layer of orange marmalade.

  5. Pour the remaining dough over the top and bake for 25 minutes. Allow to cool before cutting into bars.
