Orange Marmalade Cookie Bars
Ingredients:
1/2 cup butter
1/2 cup white sugar
1/2 tsp almond extract
1/2 tsp vanilla extract
1 egg
1 1/2 cups plain flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp salt
Beerenberg 350g Orange Marmalade
Method:
Preheat oven to 200C. Grease an 8-inch square pan.
In a large mixing bowl, cream the butter with sugar, vanilla and almond essence. Stir in the egg and mix until well blended.
In a separate bowl, mix together the flour, baking powder, cinnamon, cloves and salt. Add to the first mixture and mix well.
Spread half of the dough into the pan. Cover with a layer of orange marmalade.
Pour the remaining dough over the top and bake for 25 minutes. Allow to cool before cutting into bars.
