Pumpkin Pancakes

Ingredients:

  • 500g Grated Pumpkin, any type

  • 200g peeled, grated, potatoes

  • 1 medium onion, grated

  • 1 egg

  • 1 tbsp Beerenberg Extra Virgin olive oil

  • sour cream

  • Beerenberg Sweet Chilli Relish and salad leaves to serve


Method:

  1. Place the vegetables and egg in a large bowl and mix thoroughly.

  2. Heat the oil in a non-stick frying pan, add some egg rings and spoon the mixture into each ring until about 2cm high. Pan-fry in batches for 2-3 minutes each side or until lightly golden. (Set aside cooked pancakes in a warm oven.)

  3. Serve with sour cream, Beerenberg Sweet Chilli Relish and salad greens.
