Pumpkin Pancakes
Ingredients:
500g Grated Pumpkin, any type
200g peeled, grated, potatoes
1 medium onion, grated
1 egg
1 tbsp Beerenberg Extra Virgin olive oil
sour cream
Beerenberg Sweet Chilli Relish and salad leaves to serve
Method:
Place the vegetables and egg in a large bowl and mix thoroughly.
Heat the oil in a non-stick frying pan, add some egg rings and spoon the mixture into each ring until about 2cm high. Pan-fry in batches for 2-3 minutes each side or until lightly golden. (Set aside cooked pancakes in a warm oven.)
Serve with sour cream, Beerenberg Sweet Chilli Relish and salad greens.
