Scotch Eggs
Ingredients (Serves 6):
500g Pork & Veal Mince
2 rashers finely chopped bacon
1 small onion finely chopped
2 tblspn Beerenberg Tomato Sauce
1 tblspn Worcestershire Sauce
1 tspn dried oregano
freshly ground pepper
1 and a half cups fresh breadcrumbs
6 hard boiled eggs, peeled
Method:
Place mince, bacon, onion, sauces and herbs in a bowl and mix well. Divide mixture into 6, and coat the egg in the mince mixture. Roll egg and mince into breadcrumbs and place on an oiled oven tray.
Bake in 180 degree oven for 20 to 25 minutes or until cooked through.
Serve with mashed potato and Beerenberg Tomato Chutney.
