Strawberries in Extra Virgin Olive Oil
Ingredients (Serves 6):
2 vanilla pods
3 tbs Beerenberg Extra Virgin Olive Oil
2 to 3 punnets Beerenberg strawberries
40g castor sugar
Split the vanilla pods, scrape out the seeds and put into a small saucepan with the oil.
Cut pods into pieces and add to pan.
Warm the oil on low heat for 5 minutes, remove and cool. This lets the wonderful vanilla flavours infuse the oil.
Wash and hull the strawberries and place in a bowl.
Wash and dry the lime, then grate the peel very thinly.
Add the zest to the sugar, squirt with fresh lime juice and mix.
Add sugar zest mix to strawberries and pour over cool oil and gently toss through.
The delightful colour of the strawberries are best highlighted by piling berries into a martini style glass or in white bowls, which also show off the vibrant strawberry red colours. Serve with some of the vanilla pods for garnish.
