Strawberries Romanoff
Ingredients:
6 tbs Curacao
2 oranges
1/2 cup sugar
1/2 pint Chantilly cream
1 tsp vanilla essence
2 punnets Beerenberg strawberries
Method:
Squeeze oranges and add sugar.
Wash and hull strawberries. Macerate them in Curacao, orange and sugar in a covered container until serving time.
To serve, place strawberries in individual serving bowls and pipe the strawberries with rosettes of Chantilly cream.
To make Chantilly cream: Whip chilled cream with sugar, to taste, until firm, then fold in vanilla essence.
