Sweet Potato Salad with Chilli Lime Dressing
Ingredients (Serves 6):
1kg sweet potato, peeled and cut into 3cm cubes
4 tbs Beerenberg Extra Virgin Olive Oil
3 tbs fresh lime juice
1 1/2 tsp chilli powder
1 tsp ground cumin
1/4 cup finely chopped fresh coriander
1 medium sized red capsicum, seeded and chopped
1 bunch spring onions
1 tsp salt
1 tsp pepper
Method:
Place the sweet potato in a large saucepan and cover with water. Bring to the boil and cook until just tender, about 7 to 10 minutes.
Drain and transfer to a large bowl.
While the potatoes are cooking, make the dressing by whisking together the olive oil, lime juice, chilli powder, cumin and coriander in a small bowl.
Add the capsicum and spring onion to the drained potatoes and toss with the dressing.
Add salt and pepper.
Serve warm or refrigerate and bring to room termperature before serving.
