Thai Style Fish
Ingredients (Serves 4):
1/4 cup smooth peanut butter
2 tbs red curry paste
1 tbs lime juice
4 snapper fillets
3 tbs finely chopped coriander
Minted Tomato Salsa
3 tomatoes, peeled and diced
1/4 cup diced red shallot
1 tbs mint leaves, finely chopped
1 tbs lime juice
1 tbs Beerenberg Extra Virgin Olive Oil
Method:
To make salsa: Combine all ingredients, season to taste. Chill.
Combine peanut butter, curry paste, juice and 1 tablespoon of water. Spread onto fish, sprinkle with coriander. Seal snapper fillets in individual foil parcels.
Cook for 10 minutes at 180C or until tender. Serve with Minted Tomato Salsa.
