Thai Style Fish

Ingredients (Serves 4):

  • 1/4 cup smooth peanut butter

  • 2 tbs red curry paste

  • 1 tbs lime juice

  • 4 snapper fillets

  • 3 tbs finely chopped coriander

  • Minted Tomato Salsa

  • 3 tomatoes, peeled and diced

  • 1/4 cup diced red shallot

  • 1 tbs mint leaves, finely chopped

  • 1 tbs lime juice

  • 1 tbs Beerenberg Extra Virgin Olive Oil


Method:

  1. To make salsa: Combine all ingredients, season to taste. Chill.

  2. Combine peanut butter, curry paste, juice and 1 tablespoon of water. Spread onto fish, sprinkle with coriander. Seal snapper fillets in individual foil parcels.

  3. Cook for 10 minutes at 180C or until tender. Serve with Minted Tomato Salsa.
