Superfood Salad with Honey Mustard Dressing

  • 1 bunch baby beetroot, purple or multi-coloured, peeled and thinly sliced
  • 2 carrots, grated
  • ½ bunch kale or silverbeet, roughly chopped
  • ½ red onion, thinly sliced
  • 1 bunch radish, sliced
  • 1 can chickpeas, drained
  • 4 tablespoons Beerenberg Honey Mustard Dressing
  • small handful pumpkin or sunflower seeds


In a large bowl, mix together the baby beetroot, carrot, kale, red onion, radish and chickpeas. Add the Beerenberg Honey Mustard Dressing and toss to combine. Place in serving bowls and top with the pumpkin or sunflower seeds to serve.
