Apricot and Coconut Balls

Makes 20 Balls
  • 1 cup dried apricots, finely chopped
  • ½ jar Beerenberg Apricot Jam
  • 1¼ cups desiccated coconut
  • ¼ cup chocolate sprinkles
  • 20g white chocolate, melted for decorating
  • 20g milk chocolate, melted for decorating

In a mixing bowl add the dried apricots, Beerenberg Apricot Jam, and 1 cup of coconut. Mix to combine. With wet hands, roll into 20 even sized balls.

Place the chocolate sprinkles on a plate, and roll half of the balls in the sprinkles. Repeat this process with the remaining coconut.

To create decorative faces, dot each ball twice with white chocolate, followed by milk chocolate. Place in the fridge for two hours to set.
