Method:In a mixing bowl add the dried apricots, Beerenberg Apricot Jam, and 1 cup of coconut. Mix to combine. With wet hands, roll into 20 even sized balls. Place the chocolate sprinkles on a plate, and roll half of the balls in the sprinkles. Repeat this process with the remaining coconut. To create decorative faces, dot each ball twice with white chocolate, followed by milk chocolate. Place in the fridge for two hours to set. |
