Chipotle Chicken Tacos with Fresh Tomato Salsa

Makes 12 tacos
Ingredients
  • 2 chicken breasts, cut into 1cm strips
  • ½ bottle Beerenberg Red Pepper & Chipotle Sauce
  • 1 tablespoon olive oil
  • 4 tomatoes, diced
  • 1 small red onion, diced
  • ½ bunch coriander, roughly chopped
  • juice of 1 lime
  • 12 hard taco shells
  • 200g sour cream

Method:

Place the chicken breast strips into a mixing bowl and top with half of the Beerenberg Red Pepper & Chipotle Sauce. Toss to combine.

In another bowl add the tomato, red onion, coriander and lime juice. Mix to combine.

Heat a large frypan over high heat and add the oil. Once very hot, add the chicken. Cook, stirring occasionally for 4 minutes before adding the remaining Beerenberg Red Pepper & Chipotle Sauce. Cook for a further minute or until cooked through.

To serve, place the taco shells on a serving board and fill with tomato salsa, chipotle chicken, and sour cream.
