Herby Chicken with Blueberry, Rosemary and Thyme

  • 2 teaspoons oil
  • 4 chicken marylands
  • 1 handful rosemary
  • 1 handful thyme
  • 3 cloves garlic, roughly chopped
  • juice of 1 lemon
  • salt and pepper
  • ½ jar Beerenberg Blueberry Jam


Preheat the oven to 180°C, and grease a baking dish with the oil. Add the chicken and top with rosemary, thyme, garlic, lemon juice, and a big pinch of salt and pepper. Place in the oven for 35-45 minutes, or until the chicken is cooked through.

Remove the chicken from the baking dish, as well as any large sprigs of rosemary and thyme. Add the Beerenberg Blueberry Jam to the baking dish and stir to combine with the pan juices. Return the chicken to the pan to serve.
