Strawberry and Rocket Salad with Poppyseed Dressing

Makes 2 cups
  • For the strawberry and poppyseed dressing:
  • 1/2 cup caster sugar
  • 4 x strawberries, hulled
  • 1 teaspoon Dijon mustard
  • 1 tsp sea salt
  • 1/3 cup apple cider
  • 1/2 small red onion, peeled and roughly chopped
  • 1/2 cup olive oil
  • 3 tbsp poppyseeds

The flavour combination here is just delicious and the dressing is a winner with endless salad combinations.

For the salad:  Rocket leaves, hulled and sliced strawberries, and toasted walnuts.

For the dressing:  Combine the caster sugar, strawberries, mustard, salt, cider and onion in a blender or food processor.  Blitz to combine, then, with the motor still running, add the olive oil in a steady stream until emulsified.  Pour into a jar, stir through the poppyseeds and refrigerate until needed.

Assemble the salad with your favourite ingredients; we like peppery rocket, strawberries and toasted walnuts, and dress just before serving.
