White Chocolate & Strawberry Blondies

  • 200g butter
  • 300g white chocolate solids
  • 250g SR flour
  • 2 eggs
  • 200g castor sugar
  • salt
  • ¼ tsp vanilla paste
  • strawberries halved

Preheat your oven to 160c and line a 23cm square brownie tin

In a microwave proof bowl melt the white chocolate and butter together and transfer to a mixing bowl. Whisk in eggs one at a time. Add in castor sugar and combine thoroughly. Gently fold in SR flour with vanilla and a pinch of salt.

Pour into lined brownie tin and spread evenly. Arrange strawberry halves on the brownie. Bake for 50 minutes at 160c.

Allow to cool before portioning.
