Sri Lankan Salmon and Coconut Curry

Ingredients

2 x Pieces Skinless Salmon

1 jar Beerenberg Sri Lankan Fish Curry 30 Minute Meal Base

1/2 cup coconut cream

Juice and zest of 1 lime

Fresh coriander leaves


Directions

Line the air fryer basket with a paper liner. Sit the salmon in the basket and brush generously with Beerenberg Sri Lankan Fish Curry 30 Minute Meal Base.

Set the air fryer temperature to 180°C, timer to 10 minutes and cook salmon.

Meanwhile put 1/2 Beerenberg Sri Lankan Fish Curry 30 Minute Meal Base, coconut cream, lime juice and zest in a saucepan and bring gently to the boil.

Serve cooked salmon with coconut sauce and fresh coriander leaves.
